I work in a greek and lebanese restaurant and I make falafel by hand. It's quite a bit of work.

Especially "Ha'pa'amonim", located in Ramat Ha'sharon, near my city.
Best Falafel and/or Shawarma in the country. Damn good, I tell you.
If you put the Falafel in a Lafa in stead of a Pita, you can cram in a whole lot more shit in it.

That doesn't look very good, but looks can be *deciving.
It looks disgustingly large.
It's tons of vegetables ground up, then mixed together with lots of spices, and then it's deep fried in little cakes... it's pretty damn good.
Actually it's chickpeas & coriander, with lemon juice, olive oil, salt, pepper, and a few other bits. Some people put tahini in it as well.
That doesn't look too good. :(
Ours is chickpeas, parsley, red and green bellpeppers, jalapenos, chiles, celery, lemon juice, salt, black and red pepper, garlic, and I think thats about it. And we have make a tahini sauce to go with it. I looked coriander up and we don't put it in ours but it may be expensive in America or called something else.
